Gradually add half of the flour mixture to the egg-sugar mixture. Then, add yogurt and the remaining half of the flour mixture. Pour in the vegetable oil and mix everything with a mixer at low speed until the dough becomes smooth.

Ingredients:

  • Baking powder – 2 tsp. (10 g)
  • Salt – 1/2 tsp. (3 g)
  • Greek yogurt or sour cream – 3/5 cup (150 g)
  • Sugar – 3/4 cup (150 g)
  • Eggs – 3 pcs. (150 g)
  • Vanilla sugar – 2 sachets (20 g)
  • Vegetable oil – 1/3 cup (80 g)
  • Red currants – 1/4 container (125 g)

for the icing

  • Powdered sugar – 1/3 cup (65 g)
  • Milk – 1 tbsp. (15 g)

Cooking steps:

  1. Add flour, baking powder and salt to a medium bowl and stir.
  2. Place eggs in a large bowl, add sugar and vanilla sugar, beat with a mixer into a fluffy pale mass.
  3. Gradually add half of the flour mixture to the egg-sugar mixture, then add yogurt. Add the remaining half of the flour mixture, pour in the vegetable oil, mix with a mixer at low speed until smooth. Add red currants and mix gently.
  4. Place the dough in a pre-greased and floured 18cm bundt tin.
  5. Bake in an oven preheated to 160°C (320⁰F) for 1 hour. Let the cake cool in the tin for about 10 minutes. Remove from the tin and cool completely on a wire rack.

Icing

  1. Put powdered sugar into a small bowl, pour in milk, mix thoroughly until smooth.
  2. Pour the icing over the finished bundt cake and decorate with red currant sprigs.
