Sour Cherry Crumb Cake – VIDEO RECIPE
how to cook Sour Cherry Crumb Cake?
STEP 1
To begin, preheat the oven to 180°C (350⁰F). In a medium bowl, combine flour, baking powder, and salt, and stir well.
STEP 2
In a separate large bowl, place softened butter and add sugar. Beat the mixture with a mixer at medium speed until it becomes creamy.
TIPS: If your butter is too hard, a few seconds in the microwave can soften it up and make it easier to whip.
TIPS: Instead of using butter, you can opt for good quality margarine. It works just as well! But keep in mind that margarine contains salt. So, you might want to reduce the amount of salt in the recipe. Just a little heads up!
STEP 3
Next, add the eggs to the sugar-butter mixture and mix thoroughly.
STEP 4
Gradually incorporate half of the flour mixture into the egg-butter mixture, along with the yogurt. Then, add the remaining half of the flour mixture and mix on low speed until the dough becomes smooth.
STEP 5
In another medium bowl, combine chilled butter, cut into cubes, with flour. Stir until each piece of butter is evenly coated.
TIPS: If you prefer an easier method, you can grate chilled butter on a coarse grater and mix it with flour.
STEP 6
Use a knife to grind the mixture until it becomes crumbly.
TIPS: While this recipe suggests using a cold knife to cut butter, there are other techniques you can explore. Check out my article “How to Grind Butter with Flour: 5 Great Ways” for more tips and tricks.
STEP 7
Add sugar and almond flakes to the mixture, and gently mix. Place the mixture in the refrigerator for 10-15 minutes.
STEP 8
Grease a 20cm round baking dish with butter, and sprinkle it with flour. Pour the prepared dough into the tin and smooth the top with a spatula.
STEP 9
Place slightly thawed cherries on top of the dough.
TIPS: If you don’t have frozen cherries, fresh ones can be a fantastic alternative. They’ll add a burst of flavor to your recipe and give it a delightful twist.
STEP 10
And evenly spread the sprinkles over the cherries.
STEP 11
Put the tin with the dough into the preheated oven at 180°C (350⁰F), and bake for 40-45 minutes until it turns golden brown.
