Filo pastry is a thin dough that comes in sheets.

The easiest way to get it is by buying it frozen.

However, be careful when working with this delicate dough, as it tends to dry out and break easily.

Always keep it covered with a slightly damp towel to prevent it from drying out.

If you prefer, you can replace the phyllo dough with puff pastry or even regular pita bread in this recipe!

Easy Chicken Potato Casserole

Ingredients:

for the potatoes

  • Potatoes – 5 pcs. (600 g)
  • Bacon strips – 3 pcs. (60 g)
  • Vegetable oil – 1 tbsp. (14 g)
  • Dried rosemary – 1 tsp. (1 g)
  • Ground black pepper – 1/3 tsp. (1 g)
  • Salt – 1/2 tsp. (3 g)

for the chicken

  • Chicken breast fillet – 2 pcs. (500 g)
  • Onions – 1 pc. (120 g)
  • Flour – 2 tbsp. (18 g)
  • Sour cream – 3/5 cup (150 g)
  • Water – 2/5 cup (100 g)
  • Ground black pepper – 1/3 tsp. (1 g)
  • Salt – 1/2 tsp. (3 g)

for the dough

  • Filo pastry – 6 sheets (250 g)
  • Melted butter – 2 tbsp. (28 g)

  • Sesame seeds

Cooking steps:

Potatoes

  1. Peel the potatoes and cut into cubes. Cut the bacon into squares.
  2. Place chopped potatoes, bacon in a large bowl, add vegetable oil, season with salt, black pepper and rosemary, mix well.
  3. Put the potato mixture in a pre-greased 22cm x 16cm rectangular baking dish. Bake in an oven preheated to 200°C (400⁰F) for 15-20 minutes. Remove from oven.

Chicken

  1. Cut the onion into quarter rings. Cut the chicken breast fillet into cubes.
  2. Heat a frying pan over medium heat, pour in vegetable oil. Place the chicken fillet in the pan and cook for 5 minutes. Add chopped onion, cook for another 3-5 minutes.
  3. Salt and pepper the chicken with onions, add flour, mix. Add sour cream, add water, stir. Simmer over low heat for 3-4 minutes until the mixture thickens.

Dough

  1. Thaw the Filo pastry according to the instructions on the package. Cover with a damp kitchen towel to prevent the dough from drying out.

Assembly

  1. Spoon the chicken mixture into the baking dish on top of the potatoes.
  2. Place 1 sheet of the filo pastry on your work surface. Brush with melted butter. Carefully assemble the sheet of dough into an accordion shape and cover the chicken filling. Repeat with remaining sheets. Brush the top with the remaining butter.
  3. Bake in a preheated oven at 220°C (430⁰F) for another 8 minutes. Remove from oven, cool slightly.
  4. Sprinkle the finished savory pie with sesame seeds.
