  • Sugar – 1/2 cup (100 g)
  • Eggs – 2 pcs. (100 g)
  • Greek yogurt or sour cream – 1/5 cup (50 g)
  • Ground nuts – 1/2 cup (75 g)
  • Corn flour – 1/4 cup (50 g)
  • Blood orange zest – 1 tsp. (4 g)
  • Blood orange juice – 1/3 cup (83 g)
  • Softened butter – 1/3 cup (80 g)
  • Baking powder – 1 tsp. (5 g)
  • Salt – 1/3 tsp. (2 g)

for the blood oranges

  • Sugar – 1/2 cup (100 g)
  • Blood orange juice – 1/3 cup (83 g)
  • Blood oranges – 2 pcs. (310 g)

additionally

  • Whipped cream

Cooking steps:

Blood oranges

  1. Cut the unpeeled blood oranges into thin slices and remove the seeds from the slices.
  2. Pour blood orange juice into a saucepan, add sugar, and bring the liquid to a boil. Cook over medium heat until the sugar has dissolved. Add the blood orange slices to the saucepan and cook for another 10-12 minutes. Remove from heat and let cool. Strain the syrup through a sieve. Collect the syrup in one bowl, remove the orange slices in another bowl.
Dough
  1. In a medium bowl, add flour, cornmeal, ground nuts, baking powder and salt and stir to combine.
  2. Place softened butter in a large bowl, beat with a mixer at medium speed, add sugar, continue beating until creamy. Add eggs one at a time, mixing thoroughly after each addition.
  3. Pour half of the flour mixture into the egg-butter mixture, pour in orange juice. Add yogurt, add blood orange zest, mix with a mixer at low speed until smooth. Pour the remaining flour mixture into the resulting mass and mix.

Assembly

  1. Grease and flour the side of a 18-19 cm flower-like silicone baking pan. Pour 1/5 cup (50 g) of the collected syrup on the bottom of the pan, arrange the orange slices.
  2. Carefully pour the resulting dough into the baking pan on top of the oranges. Level the top with a spatula.
  3. Bake in an oven preheated to 180°C (350⁰F) for 35-40 minutes. Leave the finished cake in the pan for 10 minutes. Turn the pan with the slightly cooled cake onto a wire rack and let cool completely.
  4. Decorate the finished cake with whipped cream and pour over the remaining syrup.
