  • Ricotta – 1 1/4 packs (310 g)
  • Sugar – 1/3 cup (65 g)
  • Dulce de Leche (condensed milk caramel) – 1/4 can (95 g)
  • Greek yogurt – 1/4 cup (60 g)
  • Eggs – 2 pcs. (100 g)

  • Dulce de Leche (condensed milk caramel)
  • Toffee flowers
  • Ground chocolate cookies

Cooking steps:

Base

  1. Pour melted butter into the ground chocolate cookies, add sugar, mix well.
  2. Greased with butter and lined with parchment paper a 16cm one-piece round baking tin. Distribute the resulting mixture evenly over the bottom and sides of the tin, and press down well.
  3. Place in the refrigerator for 30 minutes.

Filling

  1. Place ricotta in a medium bowl, add yogurt, and blend with an immersion blender until creamy.
  2. Pour sugar into the ricotta mass, add Dulce de Leche, add eggs one at a time, stirring after each addition.

Assembly

  1. Pour the ricotta mixture onto the cooled crust and smooth the top with a spatula. Place the tin with the cheesecake in a baking tray, pour 2 cups of hot water into it.
  2. Bake the cheesecake in a preheated oven at 160°C (320⁰F) for 30 minutes. Turn off the oven and leave the cheesecake in the oven with the oven door ajar for another 30 minutes. Place in the refrigerator for 1 hour to cool completely.
  3. Brush the finished cheesecake with Dulce de Leche. Sprinkle with some ground chocolate cookies around the sides, and decorate with toffee flowers.
