Ingredients:

for the dough

  • Grated cheese – 2/3 cup (65 g)
  • Eggs – 1 pc. (50 g)
  • Salt – 1/3 tsp. (2 g)
  • Boiled eggs – 4 pcs. (200 g)
  • Dried garlic – 1/3 tsp. (1 g)
  • Frozen spinach – 1/2 pack (200 g)
  • Ground nutmeg – 1/8 tsp. (1 pinch)
  • Ground black pepper – 1/3 tsp. (1 g)

additionally

  • Eggs – 1 pc. (50 g)
  • Water – 1 tsp. (5 g)

Cooking steps:

Filling

  1. Place eggs in a medium bowl, beat lightly with a whisk, add grated cheese, and mix.
  2. Put thawed spinach in a fine sieve and press firmly with a wooden spoon to remove excess liquid.
  3. Place the ricotta in a large bowl, add the prepared spinach, salt and pepper, season with dried garlic and nutmeg, and mix.
  4. Put the egg-cheese mixture into the resulting ricotta-spinach mixture and stir.

Dough

  1. Place 1 sheet (250 g) of puff pastry, thawed according to package instructions, on a lightly floured surface and roll out lightly. Cut out a 28cm circle from the dough. Roll out 2 sheets (250 g), cut out a 20cm circle.

Assembly

  1. Put a 28cm circle of pastry in the bottom of a 20cm baking tin lined with parchment paper, leaving a 4cm border of the dough.
  2. Place peeled boiled eggs on the dough, distribute the prepared filling evenly between the eggs.
  3. Cover the top of the filling with a 20cm circle of dough, pinch the edges. Carefully cut a small hole in the center of the pie with a knife. Decorate the pie with the remaining dough.
  4. Lightly beat the egg with a whisk, add water and stir. Brush the pie with the resulting egg mixture.
  5. Bake in an oven preheated to 180°C (350⁰F) for 45-50 minutes. Serve warm.
