how to cook Easy Traditional Easter Cake?
STEP 1
To start, preheat your oven to 180⁰C (350⁰F). Grab a small bowl and place your raisins in it. Add some hot water and let them soak for about 30 minutes. Once that’s done, drain the water and lay the raisins on a paper towel to get rid of any excess moisture.
TIPS: Raisins should be prepared first. Before adding raisins to the dough, be sure to rinse with water and then blot with a paper towel to remove excess moisture.
TIPS: For an extra kick of taste and aroma, consider soaking your raisins in cognac. This simple step will elevate the overall flavor profile of your cake.
STEP 2
In a medium-sized bowl, mix together the flour, baking powder, and salt.
STEP 3
In a separate large bowl, cream together the softened butter, sugar, and vanilla sugar using a mixer on medium speed until it becomes nice and creamy.
TIPS: If your butter is too hard, a few seconds in the microwave can soften it up and make it easier to whip.
TIPS: Instead of using butter, you can opt for good quality margarine. It works just as well! But keep in mind that margarine contains salt. So, you might want to reduce the amount of salt in the recipe. Just a little heads up!
STEP 4
Now it’s time to add the eggs one at a time to the butter-sugar mixture, making sure to mix thoroughly after each addition.
STEP 5
Gradually add the flour mixture to the egg-butter mixture, using the mixer on low speed until everything is well combined.
STEP 6
Next, add the prepared raisins to the dough and mix thoroughly.
STEP 7
Grease a 22 cm round bundt tin using butter and sprinkle some flour on it. Pour the dough into the prepared tin and smooth out the top with a spatula.
STEP 8
Pop the tin with the dough into the preheated oven and let it bake for about 40-45 minutes until it turns a beautiful golden brown.
TIPS: Looking for some helpful advice on how to preheat your oven and prepare it for baking? Look no further than my articles “How and Why Do You Need to Preheat Oven” and “Top 7 Secrets How to Bake in Oven”.
STEP 9
Once it’s done, leave the cake in the tin for 10 minutes before removing it.
TIPS: Wondering if your cake is ready? Stick a wooden stick or toothpick into the center – if it comes out clean, your cake is done.
STEP 10
Let it cool completely on a wire rack.
STEP 11
In a small bowl, mix together some powdered sugar and lemon juice until you get a smooth icing.
TIPS: When it comes to icing, I’ve got you covered. If it’s too thick for your liking, simply add a little more lemon juice. On the other hand, if it’s too thin, sprinkle in some powdered sugar to thicken it up.
TIPS: When it comes to lemon juice, you have the choice between using fresh lemons or bottled lemon juice. Both options work just fine, so go with whatever you have on hand or prefer. The tangy flavor of lemon will add a refreshing twist to your icing.
STEP 12
Pour the icing over the cooled cake.
TIPS: Now, here’s one more head up about icing. It hardens pretty quickly. So, make sure to use it right away to avoid any clumpy disasters.
TIPS: Last but not least, let’s talk about icing the cake again. For a picture-perfect finish, it’s best to ice them on a wire rack. This way, any excess icing can gracefully drip off, leaving you with a beautifully decorated treat.
STEP 13
And while it’s still wet, sprinkle some colored sprinkles on top.
STEP 14
To make it even more festive, decorate with fondant flowers and chocolate eggs. Let the icing harden completely for 1-2 hours at room temperature.
STEP 15
Finally, cut Easy Traditional Easter Cake into equal pieces and serve it with a nice cup of tea. Enjoy your meal!
