Easy Roast Pumpkin Avocado Salad

Ingredients:

  • Chili pepper – 1 pc. (6 g)

for the pumpkin

  • Pumpkin – 1/2 pcs. (500 g)
  • Ground cumin – 1/2 tsp. (1 g)
  • Vegetable oil – 1 tsp. (5 g)

for the dressing

  • Lemon juice – 1 tbsp. (15 g)
  • Ground coriander – 1/2 tsp. (1 g)
  • Salt – 1/6 tsp. (1 g)
  • Vegetable oil – 1 tbsp. (14 g)

additionally

  • Parsley, chopped

Cooking steps:

  1. Cut the ripe avocado in half, remove the pit, and cut into small cubes.
  2. Slice the red chili pepper thinly.

Pumpkin

  1. Cut the pumpkin, peeled and seeded, into small cubes.
  2. Put pumpkin cubes in a medium bowl, pour in vegetable oil, add ground cumin, stir.
  3. Place the pumpkin pieces in a single layer on a baking sheet lined with parchment paper. Bake in an oven preheated to 200°C (400⁰F) for 15 minutes. Remove from oven, cool.

Dressing

  1. Pour lemon juice, vegetable oil into a small bowl, add coriander and salt, mix thoroughly.

Assembly

  1. Transfer cooled pumpkin to a medium bowl. Add chopped avocado, chili pepper, mix gently.
  2. Place the finished salad on a plate, pour over the dressing, sprinkle with chopped parsley.
