  • Semolina – 3 tbsp. (36 g)
  • Vanilla sugar – 1 sachet (10 g)
  • Sugar – 1/2 cup (100 g)
  • Egg yolks – 2 pcs. (40 g)
  • Egg whites – 2 pcs. (60 g)
  • Salt – 1/8 tsp. (1 pinch)

for the filling

  • Frozen strawberries – 1/2 cup (100 g)
  • Sugar – 1 tbsp. (12 g)

additionally

  • Powdered sugar
  • Strawberry

Cooking steps:

  1. Place ricotta in a large bowl, add egg yolks, beat with an immersion blender until creamy.
  2. Pour sugar and vanilla sugar into the ricotta mixture, add semolina, stir until smooth.
  3. Put room temperature egg whites in a medium bowl, add salt, and beat with a mixer until fluffy.
  4. Place the whipped egg whites into the ricotta mixture and mix gently.

Filling

  1. Cut slightly thawed strawberries in half lengthwise.
  2. Place sliced strawberries in a small bowl, add sugar, stir.

Assembly

  1. Distribute the strawberry filling along the bottom of a 22cm x 16cm pre-greased baking dish. Place the ricotta mixture on top, smooth the top with a spatula.
  2. Bake in a preheated oven at 175°C (350⁰F) for 50-55 minutes. Leave the cheesecake in the baking dish to cool to room temperature.
