TIPS: Let’s talk about making banana puree without an immersion blender. Don’t fret, you have options! You can use a kitchen chopper or even a regular fork to achieve the desired consistency.

In a small bowl, combine the egg yolks, sugar, and vanilla sugar. Mix them together until well combined.

  • Egg whites – 3 pcs. (90 g)
  • Sugar – 1/2 cup (100 g)
  • Greek yogurt – 2/5 cup (100 g)
  • Corn starch – 3 tbsp. (24 g)
  • Vanilla sugar – 1 sachet (10 g)
  • Bananas – 2 pcs. (360 g)
  • Salt – 1/8 tsp. (1 pinch)

for the chocolate topping

  • Coarsely chopped dark chocolate – 1 bar (90 g)
  • Cream 10% – 2/5 cup (100 g)
  • Butter – 1/5 cup (48 g)

  • Bananas

Cooking steps:

  1. Peel the bananas, roughly chop one banana, put it in a bowl, and puree it using an immersion blender. Cut the second banana into slices.
  2. Place egg yolks in a small bowl, add sugar and vanilla sugar, mix.
  3. Then, place ricotta in a large bowl, add yogurt, and blend with an immersion blender until creamy. Add banana puree, beaten yolks with sugar, add corn starch, mix thoroughly.
  4. Place egg whites in a medium bowl, add a pinch of salt, and beat with a mixer until stiff peaks form. Gently fold the whipped egg whites into the banana-ricotta mixture.
  5. Grease a silicone muffin pan for 6 cups with butter. Fill this muffin pan with the ricotta mixture. Place banana slices on top of each future cheesecake.
  6. Bake in an oven preheated to 160°C (320⁰F) for 45-55 minutes. Remove from oven, cool.

Chocolate topping

  1. Place chopped dark chocolate and butter in a medium bowl, add cream, stir. Place the bowl over a pan of simmering water, combine the ingredients while stirring constantly, and cool slightly.
  2. Pour chocolate topping over baked mini cheesecakes and garnish with banana slices.
