Easy Baked Tuna Zucchini Casserole

Ingredients:

  • Zucchini – 2 pcs. (600 g)
  • Eggs – 2 pcs. (100 g)
  • Onions – 1 pc. (105 g)
  • Chopped garlic – 1/2 tsp. (3 g)
  • Canned minced tuna – 1 can (185 g)
  • Grated cheese – 1/2 cup (50 g)
  • Flour – 1/2 cup (80 g)
  • Baking powder – 1/2 tsp. (3 g)
  • Salt – 1/2 tsp. (3 g)
  • Vegetable oil – 3 tbsp. (42 g)

  • Sour cream
  • Ground paprika
  • Parsley

Cooking steps:

  1. Cut the onion into squares. Grate the zucchini on a coarse grater. Place minced tuna in a sieve and squeeze out excess liquid.
  2. Pour a little vegetable oil into a frying pan heated over high heat. Place chopped onion in it, add chopped garlic, fry for 3 minutes.
  3. Add flour, baking powder and salt into a small bowl and stir.
  4. Place eggs in a large bowl, beat lightly with a whisk, add grated zucchini and tuna, add grated cheese, mix. Place fried onions into the resulting zucchini mass, pour in vegetable oil, add flour mixture, mix thoroughly.
  5. Place the zucchini dough on a 30cm x 20cm baking tray, pre-greased and lined with parchment paper. Smooth the top with a spatula.
  6. Bake in an oven preheated to 180°C (350⁰F) for 40-45 minutes. Leave the finished casserole in the tray for 5 minutes. Remove from the tray and let cool slightly.
  7. Pour sour cream over the cooled casserole, sprinkle with ground paprika, and garnish with parsley sprigs.
