Baked Cheesy Tomato Zucchini Casserole

Ingredients:

  • Zucchini – 1 pc. (250 g)
  • Eggs – 3 pcs. (150 g)
  • Tomatoes – 5 pcs. (220 g)
  • Flour – 4 tbsp. (36 g)
  • Baking powder – 1/5 tsp. (1 g)
  • Salt – 1/2 tsp. (3 g)
  • Ground black pepper – 1/3 tsp. (1 g)
  • Dried basil – 1 tsp. (1 g)
  • Ricotta – 1/5 pack (50 g)
  • Grated cheese – 1/2 cup (50 g)

  • Finely grated cheese

Cooking steps:

  1. Grate the zucchini on a coarse grater. Wash the tomatoes, cut 2 tomatoes into slices, the rest – in half lengthwise.
  2. Pour flour, baking powder and salt into a medium bowl, add dried basil and black pepper, stir.
  3. Place eggs in a large bowl, beat lightly with a whisk, add grated zucchini, mix. Crumble ricotta into the resulting zucchini mass, add grated cheese and flour mixture, mix gently.
  4. Place the zucchini dough on a 30cm x 20cm baking tray, pre-greased and lined with parchment paper. Smooth the top with a spatula. Place chopped tomatoes on top of the dough, lightly drown the tomato halves in the dough.
  5. Bake in an oven preheated to 175°C (350⁰F) for 30-35 minutes. Leave the finished casserole in the tray for 5 minutes. Remove from the tray and let cool slightly.
  6. Sprinkle the cooled casserole with dried basil and grated cheese, garnish with basil leaves.
