TIPS: If you don’t have cling film, a clean kitchen towel can be used to cover the dough.

Easy Orange Cheesecake Buns

Ingredients:

  • Rich yeast dough – 1 package (500 g)

  • Sugar – 1/4 cup (50 g)
  • Yogurt – 1 tbsp. (15 g)
  • Orange juice – 1 tbsp. (15 g)
  • Orange zest – 1 tsp. (4 g)

  • Eggs – 1 pc. (50 g)
  • Water – 1 tbsp. (15 g)
  • Candied orange zest
  • Orange jam

Cooking steps:

  1. Thaw the rich yeast dough according to the instructions on the package. Cut the dough into 12 equal parts and form into 12 balls.
  2. Place the dough balls on a baking sheet pre-greased with vegetable oil or lined with parchment paper. Cover the baking sheet with cling film and leave to rise in a warm, draft-free place for 1 hour.

Filling

  1. Place ricotta in a large bowl, add yogurt and orange juice, beat with an immersion blender until creamy.
  2. Place eggs in a medium bowl, add sugar, beat with a mixer into a fluffy pale mass.
  3. Add orange zest to the ricotta mixture and stir gently with a spatula. Add the egg-sugar mixture and mix until smooth.

Assembly

  1. Make a pit in the center of each ball and place the ricotta-orange filling.
  2. Place the egg in a small bowl, lightly beat with a whisk, add water, and stir. Brush the edges of the cheesecake buns with the egg brush.
  3. Bake in an oven preheated to 175°C (350⁰F) for 15-20 minutes. Remove the cheesecake buns from the oven and cool slightly. Spread orange jam over the ricotta filling and garnish with candied orange zest.
