TIPS: Instead of using butter, you can opt for good quality margarine. It works just as well!

TIPS: Melt your butter either on the stove or in the microwave – whichever is more convenient for you.

TIPS: Wondering how to grind corn flakes? A kitchen chopper is your best friend for this task. If you don’t have one, no worries! Just put the flakes in a plastic bag and crush them with a rolling pin.

Next, grease a 20cm round springform pan and line it with parchment paper. Spread the corn flakes mixture evenly onto the bottom of the pan, smoothing it out and pressing it down firmly.

TIPS: If you don’t have a springform pan, don’t worry! There are 4 alternative ways to replace it when baking.

Place the pan into the preheated oven at 180°C (350⁰F) and bake for 10 minutes. Once the crust is done, remove it from the oven and reduce the temperature to 160°C (320⁰F).

TIPS: You can use cottage cheese instead of ricotta. But remember, the quality of your cottage cheese matters. Opt for a fatty, non-acidic, and not overly dried variety. This will ensure a velvety and tender texture for your filling. Trust me, it’s worth it!

TIPS: If you’re lacking an immersion blender, fear not. Simply rub the ricotta or cottage cheese through a fine sieve a couple of times until you achieve the desired consistency. Patience pays off!

Add the eggs one at a time, mixing well with a mixer after each addition.

Pour sugar into the ricotta-egg mixture and add melted butter. Continue mixing with the mixer at low speed until all the ingredients are fully combined.

Ingredients:

for the filling

  • Eggs – 3 pcs. (150 g)
  • Sugar – 3/4 cup (150 g)
  • Greek yogurt – 1/5 cup (50 g)
  • Ricotta – 2 packs (500 g)
  • Melted butter – 1/3 cup (80 g)

for the crust

  • Sugar – 1/4 cup (50 g)
  • Vanilla sugar – 1 sachet (10 g)
  • Melted butter – 1/2 cup (120 g)
  • Crushed corn flakes – 2 cup (160 g)

for the strawberry topping

  • Sugar – 1/2 cup (100 g)
  • Corn starch – 1 tbsp. (8 g)
  • Strawberries – 1 container (500 g)

Cooking steps:

Crust

  1. Put crushed corn flakes, sugar and vanilla sugar into a medium bowl, pour in melted butter, mix thoroughly.
  2. Spread the mixture into the bottom of a 20cm baking dish, pre-greased and lined with parchment paper. Flatten and press firmly.
  3. Place the baking dish in an oven preheated to 180°C (350⁰F) and bake for 10 minutes. Remove the crust from the oven, reduce the temperature to 160°C (320⁰F).

Filling

  1. Place ricotta in a large bowl, add yogurt, and blend with an immersion blender until smooth. Add eggs to the ricotta mixture one at a time, mixing well with a mixer after each addition.
  2. Add sugar into the ricotta and egg mixture, pour in the melted butter, then continue mixing with the mixer at low speed until the ingredients are completely combined. Pour the ricotta filling onto the crust.
  3. Bake in a preheated oven at 160°C (320⁰F) for 45-50 minutes. Then open the oven door and let cool slowly for 1 hour. Place the baked cheesecake in the refrigerator for 1 hour to cool completely.
Strawberry topping
  1. Cut one half of the strawberries into cubes and cut the other half in half. Place diced strawberries in a medium bowl, add cornstarch and sugar, stir.
  2. Grind the resulting strawberry mixture with an immersion blender until smooth.
  3. Place strawberry puree in a saucepan and cook over medium heat for about 15 minutes, stirring constantly, until the mixture thickens. Remove strawberry puree from heat, strain through a sieve and cool.
  4. Place strawberry halves on cooled cheesecake and serve with strawberry topping.
