  • Salt – 1/6 tsp. (1 g)

for the chocolate cream

  • Dark chocolate – 2 bars (180 g)
  • Cream 20% – 1/3 cup (85 g)

  • Strawberry

Cooking steps:

  1. Put flour, baking powder, salt and cocoa powder to a medium bowl and stir to combine.
  2. Pour sugar into a saucepan, add sour cream and chopped dark chocolate, pour in melted butter, and place on low heat. Without bringing to a boil and stirring from time to time, combine the ingredients until smooth. Remove from heat, transfer to a large bowl, and leave to cool for 20 minutes.
  3. Add eggs one at a time into the cooled chocolate mixture, stirring well after each addition. Add flour mixture, mix thoroughly.
  4. Place the dough in a 20cm x 20cm square baking tin, pre-greased with butter and lined with parchment paper. Level the top with a silicone spatula.
  5. Bake in a preheated oven at 140°C (280⁰F) for 1 hour. Let the cake cool in the bakng tin for about 10 minutes. Remove from the tin and cool completely on a wire rack.

Chocolate cream

  1. Pour cream into a saucepan and bring to a boil over medium heat.
  2. Place the chopped chocolate in a bowl, pour in hot cream, stir until smooth and glossy. Beat the resulting mass with a mixer until you obtain a fluffy chocolate cream.

Assembly

  1. Spread one third of the chocolate cream over the top of the cake and smooth it out with a spatula. Transfer the remaining cream into a pastry bag and decorate the cake using a pastry tip.
  2. Place in the refrigerator for 30 minutes to stabilize the cream.
