  • Salt – 1/8 tsp. (1 pinch)

for the meringue

  • Egg whites – 4 pcs. (120 g)
  • Water – 1/5 cup (50 g)
  • Sugar – 1 cup (200 g)
  • Vanilla sugar – 1 sachet (10 g)
  • Citric acid – 1/8 tsp. (1 pinch)
  • Salt – 1/8 tsp. (1 pinch)

for the chocolate swirls

  • Dark chocolate – 1/2 bar (45 g)
  • Milk – 3 tbsp. (45 g)

Cooking steps:

Brownie crust

  1. Grate the chocolate on a coarse grater. Put flour into a medium bowl, sift cocoa powder through a sieve, add baking powder and salt, mix.
  2. Place eggs in a large bowl, add sugar, beat with a mixer into a fluffy pale mass. Add flour mixture, melted butter and grated chocolate, mix thoroughly
  3. Place the resulting dough in a 20cm x 20cm square baking tin, pre-greased and lined with parchment paper. Bake in an oven preheated to 175°C (350⁰F) for 30 minutes. Leave in the baking tin for 5 minutes. Remove and let cool completely.

Meringue

  1. Place room temperature egg whites in a medium bowl, add citric acid, vanilla sugar and salt, beat with a mixer until soft peaks form.
  2. Put sugar into a saucepan and add water. Place on the fire, bring to a boil, do not stir during cooking. Keep the saucepan over medium heat until the temperature of the mixture reaches 118-119°C (244-246°F).
  3. Pour the syrup into the whipped egg whites in a slow stream, continuing to beat with the mixer at medium speed. Then beat the egg whites and syrup at high speed for 5 minutes until the meringue is cool and shiny.

Chocolate swirls

  1. Place chopped chocolate in a medium bowl, pour in milk, stir.
  2. Place the bowl over a pan of simmering water, combine the ingredients while stirring constantly, and cool slightly.

Assembly

  1. Place the meringue on the cooled brownie crust, spread evenly, and smooth the top.
  2. Pour melted chocolate in a thin stream over the entire surface of the meringue, making a marble pattern.
