Moist Red Velvet Cake from Scratch

Ingredients:

for the cake

  • Cocoa powder – 2 tbsp. (10 g)
  • Sugar – 1 cup (200 g)
  • Softened butter – 1/2 cup (120 g)
  • Eggs – 2 pcs. (100 g)
  • Vanilla sugar – 1 sachet (10 g)
  • Salt – 1/3 tsp. (2 g)
  • Baking powder – 1 tsp. (5 g)
  • Baking soda – 1/2 tsp. (3 g)
  • Buttermilk – 3/4 cup (185 g)
  • Red gel food coloring – 2 tsp. (8 g)

for the buttercream

  • Softened cream cheese – 1/2 pack (125 g)
  • Softened butter – 1/4 cup (60 g)
  • Powdered sugar – 1 cup (200 g)

additionally

  • Edible sugar pearls

Cooking steps:

Cake

  1. In a medium bowl, add flour, cocoa powder, baking powder, salt, and baking soda and stir to combine.
  2. Place softened butter in a large bowl, beat with a mixer at medium speed, add sugar, vanilla sugar, continue beating until creamy. Add eggs one at a time, mixing thoroughly after each addition.
  3. Gradually add half of the flour mixture into the egg-butter mixture and mix with a mixer at low speed until smooth. Then pour in the buttermilk, add the remaining flour mixture, add red gel food coloring, and mix.
  4. Place the dough in a 20cm x 20cm square baking tin, pre-greased with butter and lined with parchment paper. Level the top with a silicone spatula.
  5. Bake in an oven preheated to 175°C (350⁰F) for 40 minutes. Let the cake cool in the tin for about 10 minutes. Remove from the tin and cool completely on a wire rack.
Buttercream
  1. Place softened butter and cream cheese in a medium bowl, beat with a mixer at medium speed. Add powdered sugar, continue beating until creamy.

Assembly

  1. Trim the edges of the cooled cake and grind into crumbs.
  2. Apply the buttercream to the cake in an even layer. Place in the refrigerator for 15-20 minutes to stabilize the cream.
  3. Cut the finished cake into squares. Sprinkle each piece with crumbs and decorate with edible sugar pearls.
