Best Orange Flourless Cake

Ingredients:

  • Sugar – 3/4 cup (150 g)
  • Eggs – 3 pcs. (150 g)
  • Ground nuts – 1 cup (150 g)
  • Poppy seeds – 1/2 cup (75 g)
  • Melted butter – 1/3 cup (80 g)
  • Oranges – 1 pc. (200 g)

for the candied orange strips

  • Oranges – 1 pc. (200 g)
  • Orange juice – 1/2 cup (125 g)
  • Sugar – 1/2 cup (100 g)

Cooking steps:

  1. Cut the unpeeled orange into large pieces, remove the seeds. Place the chopped orange in the bowl of a food processor and process until orange puree is obtained.
  2. Add ground nuts and poppy seeds into a medium bowl and stir.
  3. Place eggs in a large bowl, add sugar, beat with a mixer into a fluffy pale mass.
  4. Gradually add half of the nut mixture to the egg-sugar mixture, then pour in the melted butter. Add the remaining half of the nut mixture, add orange puree, mix until smooth.
  5. Place the resulting dough in a 20cm round baking tin, pre-greased with butter and lined with parchment paper.
  6. Bake in an oven preheated to 180°C (350⁰F) for 35-40 minutes. Leave the finished cake in the tin for 5 minutes. Remove from tin and let cool completely.

Candied orange strips

  1. Remove the zest from the orange and cut the zest into thin strips.
  2. Pour orange juice into a saucepan, add sugar, bring the liquid to a boil. Cook over medium heat until the sugar dissolves. Add orange zest strips to the saucepan. Increase heat to high, bring to a boil. Cook for 10 minutes over medium heat until the mixture thickens. Remove from heat, cool slightly.
  3. Strain the syrup through a sieve. Collect the syrup in one bowl, remove the strips of orange zest in another bowl.
  4. Pour the resulting syrup over the finished cake and leave to soak for 15 minutes. Garnish with orange zest strips and serve with remaining syrup.
