Stir occasionally and cook the butter-sugar mixture until it turns a light caramel color. Once achieved, remove the pan from the heat.

Ingredients:

for the filling

  • Butter – 3 tbsp. (42 g)
  • Frozen plums – 1/2 pack (200 g)
  • Soft marzipan – 1/4 portion (65 g)

for the crust

  • Puff pastry – 1/2 pack (250 g)

additionally

  • Eggs – 1 pc. (50 g)
  • Water – 1 tsp. (5 g)
  • Almond plates
  • Whipped cream

Cooking steps:

Filling

  1. Cut the marzipan into small cubes.
  2. Melt the butter in a 18cm cast iron frying pan over medium heat, and add sugar. Cook, stirring occasionally, until the mixture turns a light caramel color. Remove the pan from the heat.
  3. Place the slightly thawed plum halves, cut side up, in the pan so that they tightly cover the bottom. Place marzipan cubes into each plum. Leave to cool slightly.

Crust

  1. Place the puff pastry, defrosted according to package instructions, onto a lightly floured surface. Roll out into a 20cm x 20cm square.
  2. From the resulting square, cut a circle 2 cm wider than the diameter of the frying pan.

Assembly

  1. Gently place the dough on the plums, pressing it on the sides so that the dough reaches the bottom of the pan. Prick the dough with a fork.
  2. Lightly beat the egg with a whisk, add water and stir. Brush the top of the tart with the egg brush. Bake in a preheated oven at 200°C (400⁰F) for 20-25 minutes.
  3. Leave the tart in the pan for 5-10 minutes. Then run a sharp knife between the edge of the tart and the side of the pan, place a large plate on top, and turn the pan over.
  4. Sprinkle the finished tart with almond flakes and decorate with whipped cream.
