Strawberry Puff Pastry Layer Cake


  • Strawberries – 2/3 container (330 g)

for the cake layers

  • Puff pastry – 1 1/2 packages (750 g)

for the cream

  • Softened cream cheese – 1 package (250 g)
  • Sugar – 3 tbsp. (36 g)
  • Cream 33% – 2/5 cup (100 g)
  • Vanilla sugar – 1 sachet (10 g)


  • Strawberry

Cooking steps:

  1. Wash the strawberries, cut off the greens. Then cut them in half lengthwise, and cut into thin slices.

Cake layers

  1. Thaw puff pastry according to package instructions. Place 1 sheet of puff pastry (250 g) on a baking sheet previously lined with parchment paper.
  2. Bake in a preheated oven at 200°C (400⁰F) for 12 minutes. Carefully turn the sheet of dough over and bake for another 2 minutes until golden brown. Remove the cake layer from the oven and cool completely. Repeat with the remaining 2 sheets of dough.


  1. Pour the chilled cream into a medium bowl and beat with a mixer until soft peaks form.
  2. Place softened cream cheese in a large bowl, beat with a mixer, add sugar and vanilla sugar, mix.
  3. Gently fold whipped cream into cream mixture.


  1. Spread one third of the cream onto the cooled cake layer. Distribute evenly, leaving 1 cm on all sides. Top with half the sliced strawberries.
  2. Cover with the second cake layer and repeat the same steps. Then cover with the third cake layer and spread the remaining cream.
  3. Decorate the finished cake with strawberries.
