To start, preheat your oven to 200°C (400⁰F). Grab a small bowl and crack an egg into it. Give it a light beating with a whisk, then add some water and give it a good stir.

Next, take your puff pastry and defrost it according to the instructions on the package. Once it’s ready, place it on a lightly floured work surface.

STEP 3

Roll it out into a 30cm x 20cm rectangle. If you want to be precise, you can use a ruler to measure it out.

TIPS: If cracks appear while you’re working with puff pastry, don’t worry! Simply moisten them with a little water and then press down with your fingers to bring the dough back together. Easy peasy!

STEP 4

Now, grab a pizza cutter and use it to cut the rectangle into 6 squares, each measuring 10 cm by 10 cm.

TIPS: To cut your puff pastry, you can use a regular sharp knife or a pizza cutter. Both will do the job just fine.

STEP 5

Transfer each square onto a piece of parchment paper.

TIPS: If you’re making puff pastry roses, it’s best to use separate sheets of parchment paper. Cut out 6 squares that are larger than your dough pieces. This way, you’ll have more control over shaping your puff roses.

STEP 6

Take one of the squares and use a knife to make diagonal cuts in the corners, but don’t cut all the way to the center. Leave a little space.

STEP 7

In the center of each square, place a teaspoon of apricot jam. Make sure to distribute it evenly among all the squares.

STEP 8

Now, take one of the triangles that you’ve created and fold the opposite corners towards the center, creating a little “cup” around the filling. Press the ends together to secure it. Repeat this step on the opposite side.

Keep folding each triangle until you end up with a beautiful “rose” shape.

TIPS: When working with puff pastry, it can sometimes be tricky to seal the edges and keep the filling intact. To make things easier, try using an egg brush (an egg and water mixture). Simply brush the edges of the pastry with it and press firmly. This will help everything stay in place.

STEP 10

Transfer all the puff pastries onto a baking sheet and brush each rose with the egg brush.

TIPS: To apply an egg brush, it’s handy to have a special pastry brush. But if you don’t have one, no worries! You can simply use the tip of a folded paper towel or even just brush the dough with your finger.

STEP 11

Pop the baking sheet into the preheated to 200°C (400⁰F) oven and let the pastries bake for about 10-15 minutes, or until they turn a lovely golden brown. Once they’re done, take them out of the oven and let them cool for a bit.
