Simple Crispy Boneless Chicken Thighs

Ingredients:

  • Boneless chicken thighs – 4 pcs. (480 g)
  • Canned white beans – 1 can (400 g)
  • Red onion – 1 pc. (110 g)
  • Chorizo – 2 pcs. (70 g)
  • Dried garlic – 2/3 tsp. (2 g)
  • Ground black pepper – 1/3 tsp. (1 g)
  • Salt – 2/3 tsp. (4 g)
  • Water – 2/5 cup (100 g)
  • Dried rosemary – 1/3 tsp. (1 g)

Cooking steps:

  1. Place canned white beans in a sieve, drain off excess liquid, and rinse with water.
  2. Cut the red onion into thin slices. Then cut Chorizo into slices.
  3. Season boneless skin-on chicken thighs with salt, black pepper and dry garlic.
  4. Place the chopped onion on the bottom of a pre-greased 20cm x 20cm square baking tin. Put the seasoned chicken thighs on top and pour in water.
  5. Pop the baking tin with chicken thighs and onions in an oven preheated to 200°C (400⁰F) and fry for 30 minutes.
  6. Then add Chorizo and bake for another 15 minutes. Add beans to chicken thighs and Chorizo, sprinkle with dried rosemary, mix everything. Bake for another 10 minutes.
  7. Garnish finished chicken thighs with Chorizo and beans with rosemary and serve warm.
