Simple Apple Blackberry Jam Cake


  • Apples – 3 pcs. (250 g)

for the cake

  • Sugar – 1 cup (200 g)
  • Eggs – 2 pcs. (100 g)
  • Flour – 1 3/4 cup (280 g)
  • Baking powder – 1 1/2 tsp. (8 g)
  • Salt – 1/2 tsp. (3 g)
  • Milk – 1/2 cup (125 g)
  • Softened butter – 1/2 cup (120 g)

for the jam

  • Frozen blackberries – 1/3 cup (70 g)
  • Sugar – 2 tbsp. (24 g)


  • Frozen blackberries
  • Powdered sugar

Cooking steps:

  1. Peel two apples, remove seeds, grate on a coarse grater.
  2. Wash the remaining apple, remove the core, cut crosswise into thin slices.


  1. Pour sugar into a saucepan, add slightly thawed blackberries, stir. Bring to a boil, cook over medium heat for 5 minutes until mixture thickens. Remove from heat and let cool.


  1. Add flour, baking powder and salt to a medium bowl and stir.
  2. Place softened butter in a large bowl, add sugar, beat with a mixer at medium speed until creamy. Add eggs one at a time, mixing thoroughly after each addition.
  3. Gradually add the flour mixture to the egg-butter mixture, alternately with the milk, beginning and ending with the flour mixture. And mix with a mixer at low speed until smooth. Add grated apple to the resulting dough and mix thoroughly.


  1. Grease the bottom and sides of a 20cm springform pan and line with parchment paper. Place 1/3 of the resulting dough into the prepared pan, and 1/2 of the jam on top. Repeat with remaining dough and filling to finish with dough.
  2. Place apple slices and frozen blackberries on top of the dough.
  3. Bake the cake in an oven preheated to 180⁰C (350⁰F) for 1 hour. Leave the finished cake in the pan for 10 minutes. Remove from pan and let cool completely on a wire rack.
  4. Sprinkle the finished cake with powdered sugar.
