Best Baked Cheese Stuffed Mushrooms

Ingredients:

  • Champignons – 8 pcs. (320 g)
  • Ricotta – 1/2 portion (175 g)
  • Grated cheese – 1/2 cup (50 g)
  • Tomatoes – 6 pcs. (135 g)

for the sauce

  • Tomato paste – 1/5 cup (60 g)
  • Vegetable oil – 1 tbsp. (14 g)
  • Water – 2 tbsp. (30 g)
  • Ground black pepper – 1/3 tsp. (1 g)
  • Salt – 1/6 tsp. (1 g)
  • Dried basil – 1 tsp. (1 g)
  • Dried marjoram – 1 tsp. (1 g)

  • Parsley

Cooking steps:

  1. Cut the tomatoes in half lengthwise and cut each half into four pieces.
  2. Remove the stems from the mushrooms and peel the mushroom caps.

Sauce

  1. Place tomato paste in a small bowl, add vegetable oil and water, add basil and marjoram, season with black pepper and salt, mix thoroughly.

Assembly

  1. Place the mushroom caps on a plate and brush the inside of the caps with the resulting tomato sauce. Distribute the grated cheese evenly and crumble the ricotta on top.
  2. Transfer the mushrooms to a wire rack in a baking tray and bake in an oven preheated to 180°C (350⁰F) for 20 minutes.
  3. Remove the baking tray from the oven and place the tomato slices on top of the mushrooms. Bake in the oven for another 5 minutes.
