Easy Cold Beet Ham Egg Salad

Ingredients:

  • Boiled beets – 2 pcs. (360 g)
  • Napa cabbage – 1/4 pcs. (150 g)
  • Eggs – 3 pcs. (150 g)
  • Ham – 1/3 pack (165 g)
  • Frozen green peas – 1/2 pack (200 g)
  • Green onions – 1/2 bunch (50 g)

for the dressing

  • Vegetable oil – 3 tbsp. (42 g)
  • Ground coriander – 1/2 tsp. (1 g)
  • Apple cider vinegar – 1 tsp. (5 g)
  • Horseradish – 1 tsp. (6 g)
  • Salt – 1/8 tsp. (1 pinch)

Cooking steps:

  1. Cut the peeled boiled beets into thick slices. Using a cookie cutter, cut out “stars” from each beet circle. Roughly chop the leftovers.
  2. Boil the eggs in lightly salted water for 7 minutes, cool in cold water. Peel the boiled and cooled eggs and cut them lengthwise into four pieces.
  3. Then boil green peas until tender in lightly salted water, drain in a colander, and cool.
  4. Cut the ham into strips. Coarsely chop the Napa cabbage. Finely chop the green onions.

Dressing

  1. Pour vegetable oil and apple cider vinegar into a small bowl, add horseradish, season with ground coriander and salt, mix thoroughly.

Assembly

  1. Put coarsely chopped Napa cabbage, randomly chopped beets, green onions, strips of ham into a large bowl, add boiled green peas. Pour over the dressing and stir gently.
