Healthy Chicken Apple Avocado Salad

Ingredients:

  • Radishes – 2 pcs. (50 g)

for the avocado

  • Avocado – 1 pc. (250 g)
  • Lemon juice – 1/2 tsp. (3 g)
  • Salt – 1/8 tsp. (1 pinch)

for the chicken

  • Chicken breast fillet – 1 pc. (350 g)
  • Salt – 1/6 tsp. (1 g)
  • Ground black pepper – 1/3 tsp. (1 g)
  • Dried garlic – 1/3 tsp. (1 g)
  • Lemon juice – 1 tsp. (5 g)
  • Ground dried paprika – 1/3 tsp. (1 g)

for the dressing

  • Apple cider vinegar – 1 tsp. (5 g)
  • Soy sauce – 1 tbsp. (15 g)
  • Sugar – 2 tsp. (8 g)
  • Vegetable oil – 1 tbsp. (14 g)
  • Ground roasted white sesame – 2 tbsp. (18 g)
  • Water – 1 tbsp. (15 g)

Cooking steps:

  1. Cut the Napa cabbage into thin strips. Grate the carrots. Cut the radishes into thin slices.
  2. Remove the core from the apple and cut in half. Then cut the apple halves into cubes.

Chicken

  1. Pour lemon juice over the chicken breast fillet, cut in half lengthwise, season with salt and black pepper, add dried garlic and paprika, and stir. Leave to marinate for 10-15 minutes.
  2. In a well-heated frying pan in vegetable oil, fry the chicken fillet on both sides, cover with a lid, and cook until done. Remove from the pan and cool. Cut the finished chicken fillet into cubes.

Avocado

  1. Cut the ripe avocado in half, remove the pit, and scoop out the pulp with a spoon.
  2. Place avocado pulp in a medium bowl, add lemon juice and salt. Using an immersion blender, puree the avocado.
