  • Vegetable oil – 2 tbsp. (28 g)
  • Garlic cloves – 1 pc. (9 g)
  • Ground black pepper – 1/6 tsp. (1/2 g)

  • Red onion – 1/4 pcs. (50 g)
  • Lemon juice – 1 tsp. (5 g)
  • Salt – 1/6 tsp. (1 g)

Cooking steps:

  1. Using a knife, partially cut off the skin of the eggplants, cut them in half lengthwise, and chop coarsely.
  2. Cut the garlic into slices.
  3. Heat a frying pan over high heat and add the chopped eggplants. Fry without vegetable oil for 3-5 minutes, stirring occasionally, until golden brown. Pour in a little vegetable oil, stir, add chopped garlic, fry for another 1 minute.
  4. Coarsely chop the tomatoes.
  5. Finely chop the parsley.

  1. Cut the red onion into quarter rings.
