Greek Kataifi Pastry Nut Rolls

Ingredients:

for the dough

  • Kataifi pastry – 1/2 pack (225 g)
  • Melted butter – 2/3 cup (160 g)

for the filling

  • Sugar – 3 tbsp. (36 g)
  • Ground cinnamon – 1/2 tsp. (1 g)
  • Vanilla sugar – 1 sachet (10 g)
  • Eggs – 1 pc. (50 g)
  • Breadcrumbs – 1/3 cup (46 g)
  • Coarsely chopped walnuts – 1 cup (120 g)

for the syrup

  • Lemon juice – 2 tbsp. (30 g)
  • Lemon zest – 1 tsp. (4 g)
  • Sugar – 2 cup (400 g)
  • Honey – 3 tbsp. (66 g)
  • Water – 1 cup (250 g)
  • Ground cinnamon – 1/2 tsp. (1 g)
  • Whole cloves – 3 pcs. (1/5 g)

additionally

  • Coarsely chopped pistachios

Cooking steps:

Filling

  1. Place eggs in a small bowl and beat lightly with a whisk.
  2. Add breadcrumbs, sugar, vanilla sugar and cinnamon to a medium bowl and stir to combine. Pour a lightly beaten egg into the resulting mixture, add chopped walnuts, and stir.

Dough

  1. Thaw the Kataifi pastry according to the instructions on the package. Place the dough on the work surface.
  2. Carefully divide the Kataifi pastry strands into 6 equal parts. Cover with a damp kitchen towel to prevent the dough from drying out.
Assembly
  1. Make 1 part of the Kataifi pastry into a strip 7 cm wide and 30 cm long. Lightly brush with melted butter.
  2. Place 1 tbsp. of the filling onto short end of the Kataifi pastry strip closest to you, roll tightly. Repeat with the remaining dough, butter and filling. Place the resulting rolls in a butter-greased 20cm x 20cm square baking tin, leaving 1 cm between the rolls. Brush the tops of the rolls with the remaining butter.
  3. Bake in a preheated oven at 200⁰C (400⁰F) for 30 minutes until golden brown.

Syrup

  1. Pour sugar and ground cinnamon into a saucepan, add honey, zest and cloves, add lemon juice and water, stir. Place the saucepan over medium heat. Cook, stirring frequently, for 25 minutes until the syrup thickens.
  2. Remove the rolls from the oven and immediately pour hot syrup over them. Let cool completely.
  3. Pour the remaining syrup over the finished rolls and sprinkle with coarsely chopped pistachios.
