In a medium bowl, combine flour, baking powder, and salt, and give it a good stir.

Now, take a large bowl and place the softened butter in it. Add sugar and vanilla sugar, then beat everything together using a mixer at medium speed until it becomes creamy and smooth.

  • Vanilla sugar – 1 sachet (10 g)
  • Softened butter – 1/2 cup (120 g)
  • Flour – 1 cup (160 g)
  • Baking powder – 1 tsp. (5 g)
  • Salt – 1/3 tsp. (2 g)
  • Canned apricots – 1/2 can (210 g)

  • Powdered sugar
  • Apricot kernels, peeled

Cooking steps:

  1. Drain liquid from canned apricots.
  2. Put flour, baking powder and salt to a medium bowl and stir.
  3. Place softened butter in a large bowl, add sugar and vanilla sugar, beat with a mixer at medium speed until creamy. Add eggs one at a time, mixing thoroughly after each addition.
  4. Gradually add the flour mixture to the egg-butter mixture and mix with a mixer at low speed until smooth.
  5. Place the resulting dough in a pre-greased and floured 20cm x 20cm baking tin. Place the apricot halves on top of the dough, cut side up. Place one apricot kernel in each half.
  6. Bake in an oven preheated to 180°C (350⁰F) for 25-30 minutes.
  7. Leave the finished cake in the tin for 5 minutes. Remove from tin and let cool completely. Sprinkle powdered sugar on top.
