Next, roll out the dough into a 30cm x 25cm rectangle. If you want to be precise, you can use a ruler to measure it.

Chocolate Lemon Puff Pastries

Ingredients:

  • Croissant dough (yeast puff pastry) – 1/2 pack (250 g)

for the lemon filling

  • Egg yolks – 3 pcs. (60 g)
  • Sugar – 1/4 cup (50 g)
  • Water – 1 tbsp. (15 g)
  • Lemon zest – 1 tsp. (4 g)
  • Lemon juice – 4 tbsp. (60 g)
  • Softened butter – 1/2 cup (120 g)

for the chocolate topping

  • Dark chocolate – 1 bar (90 g)
  • Cream – 3 tbsp. (45 g)

  • Lemon zest

Cooking steps:

  1. Place the croissant dough, thawed according to package instructions, on a lightly floured work surface. Roll out the dough into a 30cm x 25cm rectangle. Cut into 30 squares measuring 5 cm by 5 cm.
  2. Put the squares in pairs on a pre-greased deep baking sheet to make 15 double-layered squares. Cover the baking sheet with cling film on top and leave to rise for 30 minutes in a warm, draft-free place.
  3. Preheat the oven to 200°C (400⁰F), place the baking sheet with the crusts in the oven and immediately reduce the temperature to 175°C (350⁰F). Bake for 10 minutes, then reduce temperature to 150°C (300⁰F) and bake for another 6 minutes. Remove crusts from oven and let cool on a wire rack for 10 minutes. Divide lengthwise into 2 layers.
Lemon filling
  1. Place egg yolks in a medium bowl, add sugar, water and lemon juice, add lemon zest and 1 tbsp. (14 g) butter. Put the bowl over a pan of simmering water and cook, stirring, until the mixture thickens.
  2. Strain the lemon cream through a sieve and cool to room temperature.
  3. Place the remaining butter in a medium bowl and beat with a mixer, gradually adding the lemon cream. Spread the resulting lemon filling evenly onto each bottom half of the crust and cover with the top half.

Chocolate icing

  1. Bring the cream to a boil. Place the chopped chocolate in a small bowl, pour in the hot cream, stir thoroughly until the chocolate dissolves and you get a smooth chocolate topping.
  2. Pour the chocolate topping over the finished puff pastries and garnish with lemon zest.
