Ingredients:

for the crusts

  • Sugar – 1/2 cup (100 g)
  • Egg whites – 3 pcs. (90 g)
  • Egg yolks – 3 pcs. (60 g)
  • Ground nuts – 2/3 cup (100 g)
  • Lemon zest – 1 tsp. (4 g)
  • Salt – 1/8 tsp. (1 pinch)

for the filling

  • Softened cream cheese – 1/2 pack (125 g)
  • Powdered sugar – 1 tbsp. (12 g)

for the plums

  • Plums – 6 pcs. (250 g)
  • Lemon juice – 2 tsp. (10 g)
  • Sugar – 1/4 cup (50 g)

Cooking steps:

Crusts

  1. Place room temperature egg whites in a medium bowl, add salt, and beat with a mixer until fluffy. Place the egg yolks and sugar in a large bowl and whisk until thick and pale.
  2. Add half the ground nuts and lemon zest to the egg mixture, stir. Then gently fold in the beaten egg whites, add the remaining ground nuts, stir.
  3. Place the resulting dough into a pre-greased silicone 6-pieces muffin pan.
  4. Bake in an oven preheated to 160°C (320⁰F) for 40-45 minutes. Allow the finished crusts to cool completely in the muffin pan, then remove the cooled crusts.

Plums

  1. Cut the plums in half, remove the pits. Place the plum halves, cut side up, on a pre-greased baking sheet, pour in lemon juice, and sprinkle with sugar.
  2. Bake plums in an oven preheated to 180°C (350⁰F) for 12-15 minutes, cool.

Filling

  1. Place cream cheese in a medium bowl, add powdered sugar and stir.

Assembly

  1. Place cream filling on top of each cooled crust.
  2. Garnish with baked plum halves and pour with baked plum syrup.
