  1. Place softened butter in a small bowl, add sugar and cocoa powder, mix with a mixer at low speed until smooth.
  2. Prepare a basic shortbread dough according to this recipe. Roll out the dough between 2 sheets of parchment paper into a 20cm by 25cm rectangle, 3mm thick. Spread the chocolate-sugar mixture evenly over the dough.
  3. Roll the dough into a log, starting from the wide side. Wrap the resulting roll in cling film and put it in the refrigerator for 1 hour.
  4. Prepare a chocolate shortbread dough according to this recipe. Roll out the dough into a 27 cm circle (7 cm larger than the diameter of the baking tin) with a thickness of 3 mm. Using a rolling pin, transfer the dough into a pre-greased 20 cm baking tin. Trim off excess dough with a sharp knife. Place in the refrigerator for 30 minutes.
Filling
  1. Peel the apples, remove the seeds, and slice thinly.
  2. Place the sliced apples in a large saucepan, add water, stir. Cover with a lid and bring to a boil over medium heat. Cook for 5 minutes.
