  • Corn starch – 1 tbsp. (8 g)
  • Lemon zest – 1 tsp. (4 g)

for the crumble

  • Softened butter – 3 tbsp. (42 g)
  • Sugar – 1 tbsp. (12 g)
  • Flour – 1/2 cup (80 g)
  • Baking powder – 1/5 tsp. (1 g)
  • Egg yolks – 1 pc. (20 g)

for the pears

  • Pears – 3 pcs. (630 g)
  • Sugar – 2 tbsp. (24 g)
  • Butter – 2 tbsp. (28 g)
  • Lemon juice – 1 tbsp. (15 g)
  • Water – 1/4 cup (63 g)

Cooking steps:

Crust

  1. Make a basic shortbread dough according to this recipe. Bake the chilled dough into a crust according to this recipe in a 24cm tart tin. Let cool completely.

Filling

  1. Place softened butter in a large bowl, add sugar, mix thoroughly.
  2. Add eggs, lemon zest and cornstarch to the resulting sugar-butter mixture. Add ricotta and blend with an immersion blender until creamy.

Crumble

  1. Put softened butter in a large bowl, add sugar, beat with a mixer at medium speed until creamy.
  2. Place egg yolks into the resulting sugar-butter mixture, add flour and baking powder, mix thoroughly.

Pears

  1. Pour water into a saucepan, put on fire, bring to a boil. Put sugar into a saucepan, pour in lemon juice, add butter. Cook the syrup for 5-6 minutes until thickened.
  2. Wash the pears, peel them, cut them in half and remove the core. Cut the pear halves crosswise into slices.

Assembly

  1. Fill the cooled shortbread crust with ricotta filling. Level the top with a spatula. Place sliced pears on top of the ricotta filling.
  2. Spread crumbles between the pears. Brush the tops of the pears with the resulting syrup.
