Easy Peach Crumb Cake

Ingredients:

for the crust

  • Yeast puff pastry (croissant dough) – 1/2 pack (250 g)

for the filling

  • Peaches – 3 pcs. (450 g)

for the topping

  • Flour – 2/3 cup (105 g)
  • Sugar – 3 tbsp. (36 g)
  • Eggs – 1 pc. (50 g)
  • Softened butter – 3 tbsp. (42 g)
  • Ground cinnamon – 1 tsp. (2 g)
  • Baking powder – 1/8 tsp. (1 pinch)

  • Powdered sugar

Cooking steps:

Crust

  1. Place a sheet of puff pastry dough, thawed according to package instructions, on a lightly floured surface. Roll out into a 28cm x 20 cm rectangle.
  2. Grease a 30cm x 20cm baking tray with oil. Using a rolling pin, transfer the rolled-out dough to the prepared baking tray. Cover the baking tray with cling film and leave to rise in a warm place for 40 minutes.

Filling

  1. Wash the peaches, remove the pits and cut into slices.

Topping

  1. Place softened butter and eggs in a medium bowl, add sugar, flour, baking powder and ground cinnamon, mix thoroughly.
  2. Form the dough into a ball and wrap it in cling film. Place in the freezer for 1 hour.

Assembly

  1. Arrange the peach slices evenly over the puff pastry. Grate the chilled dough on top of the peaches using a coarse grater.
  2. Bake the cake in an oven preheated to 175°C (350⁰F) for 45 minutes. Leave the finished cake in the tray for 5 minutes. Remove from the tray and cool. Sprinkle with powdered sugar.
