Whole Blood Orange Cake

Ingredients:

  • Sugar – 1 cup (200 g)
  • Greek yogurt – 1 cup (250 g)
  • Eggs – 4 pcs. (200 g)
  • Flour – 1 1/2 cup (240 g)
  • Baking powder – 2 tsp. (10 g)
  • Salt – 1/2 tsp. (3 g)
  • Vegetable oil – 1/2 cup (115 g)
  • Blood orange zest – 1 tsp. (4 g)
  • Blood orange juice – 1/2 cup (125 g)

for the syrup

  • Sugar – 1/4 cup (50 g)
  • Water – 4 tbsp. (60 g)
  • Blood orange zest in strips – from 1 pc. (8 g)

additionally

  • Orange
  • Blood orange
  • Lemon

Cooking steps:

  1. In a medium bowl, whisk together flour, baking powder and salt.
  2. Place eggs in a large bowl, add sugar, beat with a mixer into a fluffy pale mass. Add yogurt and blood orange zest.
  3. Add half of the flour mixture to the yogurt and egg mixture, pour in the blood orange juice, then add the remaining flour. Pour in vegetable oil in a slow stream and mix thoroughly.
  4. Pour the dough into a pre-greased, parchment paper-lined 24cm round baking tin.
  5. Bake until golden brown in a preheated oven at 175°C (350⁰F) for 35-40 minutes. Leave the finished cake in the tin for 5 minutes. Remove from the tin and let cool completely on a wire rack.

Syrup

  1. Pour sugar into a saucepan, add water, add strips of blood orange zest, and bring the liquid to a boil.
  2. Reduce heat to low and simmer for 5 minutes. Remove from heat and let cool. Strain the syrup through a sieve, remove the zest.
  3. Soak the cooled cake in syrup and garnish with blood orange, orange and lemon slices.
