TIPS: If your butter is too hard, a few seconds in the microwave can soften it up and make it easier to whip.

TIPS: If you’re using margarine instead of butter, keep in mind that margarine contains salt. So, you might want to reduce the amount of salt in the recipe. Just a little heads up!

Next, add baking powder and salt to the sugar-butter mixture and give it a good stir.

  • Sugar – 1/4 cup (50 g)
  • Vanilla sugar – 1 sachet (10 g)
  • Baking powder – 1/2 tsp. (3 g)
  • Salt – 1/6 tsp. (1 g)

for the fillling

  • Plums – 6 pcs. (400 g)
  • Coconut shreds – 1 cup (66 g)
  • Egg whites – 3 pcs. (60 g)
  • Sugar – 1/2 cup (100 g)
  • Vanilla sugar – 1 sachet (10 g)
  • Salt – 1/8 tsp. (1 pinch)

  • Powdered sugar
  • Plums
  • Coconut shreds

Cooking steps:

Crust

  1. Place softened butter in a large bowl, beat with a mixer at medium speed, add sugar and vanilla sugar, continue beating until creamy. Add baking powder and salt to the sugar-butter mixture and stir.
  2. Add eggs to the resulting mixture one at a time, mixing thoroughly after each addition. Gradually add flour, stir until a smooth dough is obtained.

Filling

  1. Wash the plums, cut them in half lengthwise, remove the pits, and cut each half into 4 pieces.
  2. In a large bowl, beat room temperature egg whites with a pinch of salt until fluffy. Add sugar and vanilla sugar to the beaten egg whites and continue beating until the sugar dissolves.
  3. Pour coconut shreds into the resulting mixture, add chopped plums, and mix gently.

Aseembly

  1. Place the resulting dough on a 30 cm by 20 cm baking tray, pre-greased with butter and lined with parchment paper. Distribute evenly. Place coconut meringue with plums on top of the dough. Level the top with a spatula.
  2. Bake in a preheated oven at 180°C (350°F) for 40 minutes. Leave in the baking tray for 10 minutes. Remove from the baking tray.
  3. Sprinkle the cake with powdered sugar, decorate with plum slices, and sprinkle with coconut shreds.
