Next, grab a saucepan and toss in the chopped plums. Add some sugar and water, give it a good stir, and place it over medium heat. Let the mixture come to a boil and cook it for about 15-20 minutes.

Ingredients:

for the crust

  • Sugar – 1/4 cup (50 g)
  • Ground oatmeal – 2 cups (280 g)
  • Ground nuts – 1 cup (150 g)
  • Ground cinnamon – 1 tsp. (2 g)
  • Melted butter – 2 tbsp. (28 g)

for the plums

  • Plums – 6 pcs. (210 g)
  • Sugar – 1/4 cup (50 g)
  • Water – 2 tbsp. (30 g)

for the topping

  • Oatmeal – 1/3 cup (36 g)
  • Coarsely chopped nuts – 1/4 cup (35 g)
  • Pumpkin seeds – 1/4 cup (36 g)
  • Sunflower seeds – 2 tbsp. (18 g)
  • Melted butter – 1 tbsp. (14 g)

  • Powdered sugar

Cooking steps:

Plums

  1. Wash the plums, cut them in half lengthwise, remove the pits. And cut each half into 2 parts.
  2. Place chopped plums in a saucepan, add sugar, add water, stir and place over medium heat. Bring the mixture to a boil and cook for 15-20 minutes.
  3. Cool the finished plums completely and chop with an immersion blender. Place the resulting plum jam in the refrigerator.
Crust
  1. Pour ground oatmeal, ground nuts and cinnamon into a separate bowl and mix with a whisk.
  2. Place the eggs in a large bowl, add sugar, beat with a mixer into a fluffy pale mass.
  3. Add part of the nut-oat mixture to the egg-sugar mixture, pour in the melted butter. Add the remaining nut-oat mixture, mix thoroughly.
  4. Place the dough in a 20cm x 20cm baking tin, pre-greased and lined with parchment paper. Distribute the dough evenly and press firmly to the bottom with a spatula. Bake in a preheated oven at 180°C (350⁰F) for 15 minutes.
Topping
  1. Pour oatmeal, coarsely chopped nuts, pumpkin seeds, sunflower seeds into a large bowl, pour in melted butter, mix thoroughly.

Assembly

  1. Spread the chilled plum jam over the finished crust. Distribute the topping evenly on top, and press down lightly. Bake in an oven preheated to 180°C (350⁰F) for another 20 minutes.
  2. Leave the baked cake in the tin for 10 minutes. Remove from the tin and let cool completely.
  3. Sprinkle the chilled cake with powdered sugar and cut into equal pieces.
