Easy Strawberry Yogurt Cake

Ingredients:

  • Baking powder – 1/2 tsp. (3 g)
  • Baking soda – 1/6 tsp. (1 g)
  • Salt – 1/3 tsp. (2 g)
  • Sugar – 1/2 cup (100 g)
  • Eggs – 2 pcs. (100 g)
  • Yogurt – 1/3 cup (83 g)
  • Softened butter – 1/2 cup (120 g)
  • Frozen strawberries – 1 cup (200 g)

Cooking steps:

  1. Cut some of the slightly thawed strawberries in half lengthwise, and chop large berries into large pieces.
  2. Add flour, baking powder, baking soda and salt to a medium bowl and stir to combine.
  3. Place softened butter in a large bowl, add sugar, beat with a mixer at medium speed until creamy. Add eggs one at a time, mixing thoroughly after each addition.
  4. Gradually add half of the flour mixture to the egg-butter mixture, then pour in yogurt. Add the remaining half of the flour mixture, and mix with a mixer at low speed until smooth.
  5. Place the dough in a 20cm round baking tin, pre-greased with butter and sprinkled with flour. Level the top with a spatula. Place half the strawberries on top of the dough, press down about 1 cm. Place the remaining berries on top.
  6. Bake the cake in an oven preheated to 180°C (350⁰F) for 45-50 minutes. Leave the finished cake in the tin for 5 minutes. Remove from tin and let cool completely on a wire rack.
  7. Sprinkle the cake with powdered sugar and decorate with fresh strawberries.
