Easy Kiwi Coconut Cake

Ingredients:

  • Flour – 1 cup (160 g)
  • Eggs – 2 pcs. (100 g)
  • Sugar – 3/4 cup (150 g)
  • Lemon zest – 1 tsp. (4 g)
  • Lemon juice – 1 tbsp. (15 g)
  • Baking powder – 1 tsp. (5 g)
  • Salt – 1/6 tsp. (1 g)
  • Coconut shreds – 1/2 cup (33 g)
  • Buttermilk – 3/4 cup (185 g)
  • Kiwi – 2 pcs. (150 g)
  • Softened butter – 1/2 cup (120 g)

  • Powdered sugar

Cooking steps:

  1. Peel the kiwi and cut into thin slices.
  2. In a separate bowl, add flour, coconut shreds, baking powder and salt and mix.
  3. Place softened butter in a large bowl, add sugar, beat with a mixer at medium speed until creamy. Add eggs one at a time, mixing thoroughly after each addition.
  4. Pour part of the flour mixture into the egg-butter mixture, then pour in the buttermilk and lemon juice. Add the remaining flour mixture and lemon zest, mix with a mixer at low speed until smooth.
  5. Place the resulting dough into a pre-greased and floured 22cm round baking tin. Place kiwi slices on top.
  6. Bake in an oven preheated to 180°C (350⁰F) for 45-50 minutes. Leave the finished cake in the tin for 5 minutes. Remove from the tin and let cool completely on a wire rack.
  7. Sprinkle the finished cake with powdered sugar.
