  • Coarsely chopped peanuts – 1/3 cup (50 g)
  • Corn flour – 1/4 cup (50 g)
  • Baking powder – 1 tsp. (5 g)
  • Egg whites – 1 pc. (30 g)
  • Salt – 1/8 tsp. (1 pinch)
  • Ground cinnamon – 1/2 tsp. (1 g)
  • Ground nutmeg – 1/8 tsp. (1 pinch)
  • Ground ginger – 1/8 tsp. (1 pinch)
  • Liquid honey – 1 tbsp. (22 g)

  • Brown sugar

Cooking steps:

  1. Finely chop the dried apricots.

  6. Place room temperature egg whites in a medium bowl, add salt, and beat with a mixer until fluffy.
  7. Fold the beaten egg whites into the date mixture and mix gently.
  8. Place the resulting dough in a pre-greased and parchment lined 17cm x 10 cm loaf tin. Arrange dried banana and walnuts on top of the dough, sprinkle with brown sugar.
  9. Bake in a preheated oven at 180⁰C (350⁰F) for 1 hour. Leave the cake in the tin for 5 minutes. Remove from tin and let cool completely on a wire rack. Pour liquid honey over the finished cake.
