for the icing

  • Powdered sugar – 1/2 cup (100 g)
  • Milk – 1 1/2 tbsp. (22 g)

Cooking steps:

  1. Drain liquid from canned apricots, reserving 1/5 cup (50 g). Cut the apricot halves into cubes.
  2. In a medium bowl, add flour, cornstarch, baking powder, baking soda and salt and stir to combine.
  3. Place eggs in a large bowl, add sugar, beat with a mixer into a fluffy pale mass.
  4. Gradually add half of the flour mixture to the egg-sugar mixture, then pour in the milk and the collected liquid from the apricots. Add the remaining half of the flour mixture, mix with a mixer at low speed until smooth. Add chopped apricots to the dough and mix.

Assembly

  1. Place the resulting dough into a pre-greased and floured 22cm round baking tin.
  2. Bake in a preheated oven at 180°C (350⁰F) for 35 minutes.
  3. Leave the finished cake in the tin for 5 minutes. Remove from tin and let cool on a wire rack.
