Let’s get started by preheating the oven to a toasty 160°C (320⁰F). Now, let’s drain the liquid from those canned pears. Put the liquid into a saucepan. Give it a good boil until we’ve got ourselves a thick syrup. While that’s happening, let’s slice up those canned pear halves into nice pieces.

TIPS: Instead of using canned pears, consider using fresh ones. Simply take two peeled pears, slice them, and place them in a saucepan. Pour 1/2 cup (125 g) of water and add 2 tbsp. (24 g) of sugar. Cook over medium heat for 10 minutes or until the pears are tender.

Next up, grab a medium bowl and throw in some chopped dark chocolate and butter. Place that bowl over a pan of simmering water and start stirring away. Keep at it until everything is combined and slightly cooled.

TIPS: Instead of using butter, you can opt for good quality margarine. It works just as well! But keep in mind that margarine contains salt. So, you might want to reduce the amount of salt in the recipe. Just a little heads up!

Upside Down Pear Chocolate Mud Cake

Ingredients:

  • Sugar – 1/2 cup (100 g)
  • Flour – 3 tbsp. (27 g)
  • Cocoa-powder – 2 tbsp. (10 g)
  • Dark chocolate – 1 1/2 bars (150 g)
  • Canned pears – 2/3 cans (280 g)
  • Butter – 1/2 cup (120 g)
  • Salt – 1/8 tsp. (1 pinch)

Cooking steps:

  1. Drain the liquid from canned pears, place it in a saucepan, and boil until a thick syrup is obtained. Cut the canned pear halves into slices.
  2. Place chopped dark chocolate and butter in a medium bowl. Place the bowl over a pan of simmering water. Combine the ingredients while stirring constantly, and cool slightly.
  3. Place eggs and egg yolk in a large bowl, add sugar, beat with a mixer into a fluffy pale mass. Add the chocolate mixture, then add flour, salt and cocoa, mix.
  4. Place the pear slices in a pre-greased 20cm round baking dish. Pour the chocolate-egg mixture over the pears.
  5. Bake in a preheated oven at 160°C (320⁰F) for 1 hour, until the cake pulls away from the edges of the baking dish. The middle should remain slightly sticky.
  6. Remove the finished cake from the dish, turn it over, pour the thick syrup over it. Serve warm.
