To start, preheat your oven to 180°C (350⁰F). Next, drain the liquid from the canned peaches and place them in a saucepan. Let the liquid simmer until a thick syrup forms.

TIPS: Instead of using canned peaches, consider using fresh ones. Simply take two peeled peaches, slice them, and place them in a saucepan. Pour 1/2 cup (125 g) of water and add 2 tbsp. (24 g) of sugar. Cook over medium heat for 10 minutes or until the peaches are tender.

Set aside three peach halves and cut the rest into small cubes.

In a medium bowl, combine flour, baking powder, and salt. Give it a good stir.

In a large bowl, beat softened butter with a mixer at medium speed. Add sugar and vanilla sugar, and continue beating until the mixture becomes creamy.

TIPS: If your butter is too hard, a few seconds in the microwave can soften it up and make it easier to whip.

TIPS: Instead of using butter, you can opt for good quality margarine. It works just as well! But keep in mind that margarine contains salt. So, you might want to reduce the amount of salt in the recipe. Just a little heads up!

Ingredients:

  • Flour – 2/3 cup (110 g)
  • Baking powder – 1 tsp. (5 g)
  • Sugar – 1/3 cup (70 g)
  • Milk – 3 tbsp. (45 g)
  • Eggs – 1 pc. (50 g)
  • Salt – 1/6 tsp. (1 g)
  • Softened butter – 1/3 cup (80 g)
  • Vanilla sugar – 1 sachet (10 g)
  • Yogurt – 1/3 cup (80 g)
  • Canned peaches – 1 can (410 g)
  • Frozen red currants – 1/2 cup (100 g)

  • Whipped cream

Cooking steps:

  1. Drain the liquid from the canned peaches. Place this liquid in a saucepan, and simmer until a thick syrup is obtained. Set aside 3 peach halves and cut the rest into small cubes.
  2. In a medium bowl, whisk together flour, baking powder and salt.
  3. Place softened butter in a large bowl, beat with a mixer at medium speed, add sugar and vanilla sugar, continue beating until creamy. Add the egg, mix thoroughly.
  4. Gradually add half of the flour mixture into the egg-butter mixture and mix with a mixer at low speed until smooth. Then pour in the milk, add the remaining flour mixture, add yogurt, and mix.
  5. Grease a 16cm bundt tin with butter and line the sides with parchment paper.
  6. Place 3 peach halves on the bottom of the tin, cut side up, and add slightly defrosted red currants into the space between the peaches. Place diced peaches on top of the currants. Divide the dough evenly over the peaches and currants.
  7. Bake in an oven preheated to 180°C (350⁰F) for 35-40 minutes. Leave the cake in the tin for 10 minutes, then carefully remove from the tin.
  8. Pour syrup over the top of the finished cake and decorate with whipped cream.
