TIPS: If you don’t have canned apricots on hand, feel free to use fresh ones instead. They’ll work just as well in your recipe.

In a medium bowl, combine flour, cinnamon, baking powder, and salt. Give it a good stir.

  • Baking powder – 1 tsp. (5 g)
  • Salt – 1/3 tsp. (2 g)
  • Greek yogurt – 2/5 cup (100 g)
  • Milk – 1 tbsp. (15 g)
  • Sugar – 2/5 cup (80 g)
  • Eggs – 1 pc. (50 g)
  • Ground cinnamon – 1/2 tsp. (1 g)
  • Softened butter – 1/4 cup (60 g)
  • Canned apricots – 1/2 can (200 g)

  • Powdered sugar

Cooking steps:

  1. Drain liquid from canned apricots. Cut the apricot halves lengthwise into 4 pieces.
  2. Add flour, cinnamon, baking powder and salt to a medium bowl and stir to combine.
  3. Place softened butter in a large bowl, add sugar, beat with a mixer at medium speed until creamy. Add eggs, mix well.
  4. Gradually add half of the flour mixture to the egg-butter mixture, add yogurt and milk. Add the remaining half of the flour mixture, mix with a mixer at low speed until smooth.
  5. Place the dough in a pre-greased and floured 18cm round baking tin. Smooth the top with a spatula. Place apricot slices on top of the dough.
  6. Bake the cake in an oven preheated to 180°C (350⁰F) for 40-45 minutes. Leave the finished cake in the tin for 5 minutes. Remove from tin and let cool completely on a wire rack. Sprinkle with powdered sugar.
