  • Sugar – 1/4 cup (50 g)
  • Corn starch – 2 tbsp. (16 g)
  • Chilled butter – 3 tbsp. (42 g)
  • Frozen strawberries – 1 1/2 cup (300 g)

for the dough

  • Flour – 1 cup (160 g)
  • Sugar – 1/2 cup (100 g)
  • Baking powder – 1/2 tsp. (3 g)
  • Vanilla sugar – 1 sachet (10 g)
  • Chilled butter – 1/3 cup (80 g)
  • Eggs – 1 pc. (50 g)

  • Strawberry
  • Whipped cream
  • Powdered sugar

Cooking steps:

Filling

  1. Peel the apples, remove the core, cut into thin slices.
  2. Place slightly thawed strawberries in a medium bowl, add sugar and cornstarch, stir.
  3. Place the strawberry mixture in a saucepan and cook over medium heat, stirring constantly until the mixture thickens. Remove from heat.
  4. Add butter to the strawberry mixture, stir until the butter is completely dissolved, add sliced apples.

Dough

  1. Put flour, sugar, vanilla sugar and baking powder into a medium bowl and mix.
  2. Add chilled butter, cut into cubes, into flour mixture. Stir until each piece of butter is evenly coated with flour. Grind the resulting mixture until crumbs are obtained.
  3. Pour the lightly beaten egg into the butter crumbs, stir until the mixture comes together and forms a thick dough.

Assembly

  1. Place the shortbread dough on a lightly floured work surface. Form the dough into a circle about 1 cm thick and cut out “flowers” using cookie cutters of different sizes. Place the resulting “flowers” on top of the strawberry-apple filling.
  2. Grease a 21cm round baking dish with butter. Place the strawberry-apple filling into the prepared dish.
  3. Put the baking dish in an oven preheated to 200°C (400⁰F) and bake for 40 minutes until golden brown. Leave the cobbler in the baking dish to cool to room temperature. Sprinkle the finished cobbler with powdered sugar, serve with strawberries and whipped cream.
