Take a large bowl and place the sliced peaches in it. Add sugar, flour, cornstarch, and lemon juice. Give it a good stir.

  • Peaches – 4 pcs. (600 g)
  • Sugar – 1/2 cup (100 g)
  • Flour – 2 tbsp. (18 g)
  • Corn starch – 2 tbsp. (16 g)
  • Lemon juice – 1 tsp. (5 g)
  • Frozen raspberries – 1/2 cup (100 g)

additionally

  • Eggs – 1 pc. (50 g)
  • Water – 1 tsp. (5 g)
  • Sugar

Cooking steps:

Filling

  1. Wash the peaches, cut them in half, remove the pit. Cut the halves into thin slices.
  2. Place sliced peaches in a large bowl, add sugar, add flour and cornstarch, add lemon juice, stir.

Dough

  1. Put flour and sugar to a medium bowl and stir.
  2. Add chilled butter, cut into cubes, into flour mixture. Stir until each piece of butter is evenly coated with flour. Grind the resulting mixture with a knife until crumbs are obtained.
  3. Pour cold water into the butter crumbs, stir until the mixture comes together and forms a thick dough. Wrap the resulting shortbread dough in cling film and put it in the refrigerator for 30 minutes.

Assembly

  1. Place the rested shortbread dough on a lightly floured work surface. Roll out the dough into a 30 cm circle. Using a rolling pin, transfer the dough to a baking sheet covered with parchment paper.
  2. Place the prepared filling with peaches in the center of the dough, leaving 4 cm from the edge. Place slightly thawed raspberries on top of the filling. Fold the edges of the dough over the fruits.
  3. Place the eggs in a small bowl, lightly beat with a whisk, add water, and stir. Brush the edges of the galette with the egg mixture, then sprinkle with sugar.
  4. Place the baking sheet with the galette in an oven preheated to 200°C (400⁰F) and bake for 30 minutes. Let the cake cool for at least 20 minutes.
