Apple Cheesecake Yeast Cake

Ingredients:

for the crust

  • Rich yeast dough – 1/2 pack (250 g)

for the filling

  • Apples – 3 pcs. (300 g)
  • Ricotta – 1 package (250 g)
  • Greek yogurt – 2/5 cup (100 g)
  • Eggs – 2 pcs. (100 g)
  • Sugar – 1/2 cup (100 g)
  • Lemon zest – 1 tsp. (4 g)
  • Corn starch – 2 tbsp. (16 g)

  • Powdered sugar

Cooking steps:

Crust

  1. Place a sheet of rich yeast dough, thawed according to package instructions, on a lightly floured surface. Roll out into a 30cm x 30cm square. Make 2 cuts on each side, 2 cm long, so as to divide each side into 3 equal parts.
  2. Grease a 24cm round baking tin and sprinkle with flour. Using a rolling pin, transfer the rolled-out dough into the prepared tin and press down gently. Cover the tin with cling film and leave to rise in a warm place for 40 minutes.

Filling

  1. Remove seeds from apples and cut into thin slices.
  2. Place ricotta in a medium bowl, add sugar and cornstarch, stir. Add eggs and blend with an immersion blender until smooth. Add yogurt and lemon zest to the resulting mass, mix well.

Assembly

  1. Place the ricotta filling on the yeast dough and place apple slices on top in a circle.
  2. Bake the cake in an oven preheated to 175°C (350⁰F) for 40-45 minutes. Leave the finished cake in the tin for 5 minutes. Remove from the tin and cool. Sprinkle powdered sugar on top.
