TIPS: If you don’t have a cake ring, no worries! You can easily use a glass or cup with the right diameter instead.

Fried Strawberry Hand Pies

Ingredients:

for the dough

for the strawberry jam

  • Sugar – 1/5 cup (50 g)
  • Butter – 2 tbsp.(28 g)
  • Lemon juice – 1 tbsp. (15 g)
  • Frozen strawberries – 1 1/2 cup (300 g)

additionally

  • Eggs – 1 pc. (50 g)
  • Water – 1 tsp. (5 g)
  • Sugar

Cooking steps:

Strawberry jam

  1. Cut slightly thawed strawberries into cubes. Place chopped strawberries in a medium bowl, add lemon juice, add sugar, and stir.
  2. Place butter in a frying pan, melt over medium heat, add strawberry mixture. Fry for 10-15 minutes until the strawberries caramelize, cool.

Dough

  1. Make a basic shortbread dough according to this recipe.
  2. Roll out the chilled dough between 2 sheets of parchment paper to a thickness of 4mm. Cut out 12 circles using a 7cm pastry ring.
  3. Cut a heart-shaped hole in the middle of half the circles. Place all circles in the refrigerator for 15 minutes.
Assembly
  1. Place the egg in a small bowl, lightly beat with a whisk, add water, and stir.
  2. Place 6 circles without holes on a baking sheet lined with parchment paper.
  3. Place 1 tsp (20 g) of the strawberry jam in the center of each circle. Brush the edge with egg wash, cover the top with a circle with a hole, and use a fork to seal the edges. Brush each hand pie with egg wash and sprinkle with sugar.
  4. Bake hand pies in an oven preheated to 180°C (350⁰F) for 15-20 minutes. Leave the finished hand pies on the baking sheet for 5 minutes, transfer to a wire rack, and let cool completely.
