Easy Iced Lemon Shortbread Cookies

Ingredients:

  • Flour – 1 cup (160 g)
  • Sugar – 1/4 cup (50 g)
  • Lemon zest – 1 tsp. (4 g)
  • Softened butter – 1/2 cup (120 g)

for the icing

  • Powdered sugar – 1 cup (200 g)
  • Hot water – 2 tbsp. (30 g)
  • Lemon juice – 1 tbsp. (15 g)
  • Softened butter – 1 tbsp. (14 g)

additionally

  • Blue gel food coloring

Cooking steps:

  1. Place softened butter in a large bowl, beat with a mixer at medium speed, add sugar, continue beating until creamy. Add lemon zest, mix well.
  2. Gradually add flour to the sugar-butter mixture and stir with a wooden spoon until smooth. Form the resulting dough into a ball, wrap in cling film and refrigerate for 1 hour.
  3. Roll out the chilled dough between 2 sheets of parchment paper to a thickness of 5mm. Cut out 11 circles using a 6 cm pastry ring and place in the refrigerator for 15 minutes. Put the circles on a baking sheet lined with parchment paper.
  4. Bake cookies in an oven preheated to 175°C (350⁰F) for 15-20 minutes. Leave the finished cookies on the baking sheet until they cool completely.
Icing
  1. Pour powdered sugar into a small bowl and add butter. Pour hot water over the butter and mix thoroughly until smooth. Pour in lemon juice and stir.
  2. Apply the finished icing to the cooled cookies and leave until the icing hardens. Add 1-2 drops of blue food coloring to the remaining icing and draw snowflakes on the cookies.
