STEP 1

To start, preheat your oven to 200°C (400⁰F). Next, drain the liquid from the canned peaches.
TIPS: Don’t have canned peaches on hand? No problem! Fresh, peeled peaches work just as well. Just follow this skin-removal technique by dunking them in boiling water for a quick 1-2 minutes. Then, peel away and enjoy the fresh goodness.
STEP 2

In a saucepan, combine the yogurt, butter, sugar, and vanilla sugar.
TIPS: Instead of using butter, you can opt for good quality margarine. It works just as well! But keep in mind that margarine contains salt. So, you might want to reduce the amount of salt in the recipe. Just a little heads up!
STEP 3

Cook over low heat, stirring continuously, until the mixture becomes smooth. Once done, remove it from the heat and let it cool.
STEP 4

In a medium bowl, mix together the flour, baking powder, and salt. Set this aside.

Ingredients:
- Canned peaches – 2/3 can (273 g)
for the dough
- Flour – 2/3 cup (105 g)
- Baking powder – 1/2 tsp. (3 g)
- Salt – 1/6 tsp. (1 g)
- Eggs – 1 pc. (50 g)
- Sugar – 1/4 cup (50 g)
- Greek yogurt – 2/5 cup (100 g)
for the yogurt topping
- Greek yogurt – 2/5 cup (100 g)
- Butter – 3 tbsp. (42 g)
- Sugar – 1/4 cup (50 g)
- Vanilla sugar – 1 pack (10 g)
additionally
- Cocoa powder
- Melted dark chocolate
- Coarsely chopped nuts
Cooking steps:
- Drain liquid from canned peaches.
Yogurt topping
- Place yogurt in a saucepan, add butter, add sugar and vanilla sugar.
- Cook over low heat, stirring, for 1-2 minutes until the mixture is smooth. Remove from heat, let cool.
Dough
- Add flour, baking powder and salt to a medium bowl and stir.
- Place eggs in a large bowl, add sugar, beat with a mixer into a fluffy pale mass.
- Gradually add half of the flour mixture to the egg-sugar mixture, then add yogurt. Add the remaining half of the flour mixture, mix with a mixer at low speed until smooth.
Assembly
- Place the resulting dough in a pre-greased and floured 20cm x 20cm square baking tin. Place the peach halves on top of the dough, cut side down.
- Bake in a preheated oven at 200°C (400⁰F) for 15 minutes.
- Remove from the oven and pour the yogurt topping on top of the peaches. Bake in a preheated oven at 180°C (350⁰F) for another 10 minutes.
- Leave the finished cake in the tin for 5 minutes. Remove from the tin and let cool completely.
- Sprinkle cocoa powder on top of the cake. Then pour melted dark chocolate over it and sprinkle with coarsely chopped nuts.
